Crispy Rice Bubble Slice

A crispy slice perfect for lunchboxes and easy for kids to help make in the kitchen too!
Serves: 6
  • 1 cup quick oats
  • 1 cup rice bubbles
  • 2 tbsp cornflour
  • ¼ tsp baking powder
  • ¼ cup honey
  • 2 tbsp coconut oil
  • ¾ tsp vanilla extract
  • ½ tbsp brown sugar
  1. Preheat your oven to 180oC
  2. Line a 20cm x 20cm baking tray with grease proof paper
  3. Mix the first four dry ingredients in a bowl.
  4. In another bowl, melt the honey and coconut oil together in the microwave for 30 seconds before whisking in the vanilla / brown sugar.
  5. Stir the wet mix into the dry mix.
  6. Press into the lined baking tray.
  7. Bake for 20min and then rest for 10min before removing. Let sit for a further 10 minutes before cutting into 6 bars.
