Make ahead and store in the refrigerator
Serves: 2 cups
  • 1 onion, diced
  • 1 clove of garlic, crushed
  • 2 tbsp olive oil
  • 8-9 tomatoes, diced
  • 2 cups of water
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  1. Sautee the onion and garlic in the olive oil.
  2. Add the tomatoes and water, bring to the boil.
  3. Reduce to a simmer and add the remaining ingredients.
  4. Simmer for 20-30 minutes, stir regularly, add water and salt/pepper to taste and desired thickness.
  5. Bottle in sterilised jars.
