Baked Pork Taco Dinner

Versatile mexican dishes are perfect for family meals. This one is simple enough to prepare with kids too. By baking in some of the filling helps keep it in place and gives kids an extra shot of confidence that may not ordinarily like getting messy or losing the filling from their taco.
Serves: 10 tacos
  • 2-3 tbsp olive oil
  • 1 cup pre-cooked black beans
  • 200g pork mince
  • 1 onion diced
  • 2 tomatoes diced
  • 1 clove of minced garlic
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp ground coriander
  • 10 taco shells
  • 1-2 cups shredded cheese
  1. Preheat oven to 180 degrees.
  2. Heat olive oil over medium heat in a medium frying pan. Add onion, pork, ground coriander, garlic, cumin the pan and cook for 2-3 minutes, or until the onion is translucent and fragrant.
  3. Add diced tomatoes and black beans. Stir to combine fully. Reduce to simmer and allow to cook for 2-3 more minutes.
  4. Place the taco shells in the baking dish, standing up. Top with the pork mixture, almost to the top of each shell. Sprinkle each shell generously with shredded cheese.
  5. Bake for 12-14 minutes or until cheese is fully melted and the edges of the shells are browned. Remove from the oven and top with your favourite items - like avocado, salad leaves, sour cream etc.
